I love making healthy, tasty treats for my kids, and these chickpea cookies are a huge hit in our house. Seriously, they were all gone within the day! They’re delicious and packed with wholesome ingredients that give my kids plenty of energy for playtime without the sugar crash. With no added sugar, I can feel good about giving them these cookies.

- Chickpeas
- Peanut butter
- Date Syrup (or maple syrup or honey)
- Baking Powder
- Vanilla Extract
- Salt
- Chocolate chips (optional)
To make this recipe truly no sugar added, you’ll need to use date syrup. I recently started using date syrup, and my kids are obsessed with it. My son will eat almost any food as long as it has date syrup on it! We sometimes get the Date Lady brand, and he loves it so much he’s been known to take it to bed with him haha! The only ingredient in it is dates, which naturally sweetens food and is so yummy. If you don’t have date syrup, you can use maple syrup or honey as an alternative. While they are technically an added sugar, they’re still better options than table sugar.
Another key ingredient is peanut butter. Make sure to use peanut butter with no added sugar to keep these cookies truly sugar-free. I get this peanut butter from Walmart, and it works perfectly in the recipe.
For an extra treat, you can add chocolate chips. I use HU Kitchen no added sugar chocolate chips. These are sweetened using dates as well, and they are really tasty! They add a yummy touch to the cookies while keeping them free from refined sugars. They can be tricky to find in stores though, so if you happen to find some, stock up with a few bags!

How to Store Chickpea Cookies
To keep your chickpea cookies fresh, store them in an airtight container. You can keep them on the counter, in the pantry, or even in the refrigerator—whatever works best for you. I like to use these glass containers to store food, as they keep everything sealed and fresh.
In our house, these cookies have never really lasted longer than a couple of days because they’re so popular, but I’m sure they would still be tasty after a few days. Just be sure to keep them properly stored to maintain their delicious flavor and texture.
How Kids can Help

Baking these chickpea cookies is a fun activity to do with your kids, and there are several ways they can get involved. Here are some simple tasks that my toddler likes to help with:
- Measuring Ingredients: Let your kids measure out the ingredients. It’s a great way to practice math skills and fine motor coordination.
- Pouring into the Bowl: After measuring, they can pour the ingredients into the mixing bowl. This helps them feel like they are really part of the process. We like to count the scoops as they go into the bowl.
- Mixing: My son loves to help mix the ingredients or watch them mix together if we use our stand mixer.
- Rolling the Dough: Once the dough is ready, have your kids roll it into balls. This is a fun, hands-on task that they usually love since it is so similar to playdoh!
- Flattening the Cookies: After rolling the dough into balls, your kids can flatten them with their palms.
Including your kids in the baking process not only makes it more fun but also turns it into a learning experience. They’ll be proud to enjoy the cookies they helped create! My son is always more likely to try new foods if he helped make them!
When we bake, my son usually helps in the kitchen with his toddler tower so he can reach the counter. Sometimes, we use this table so the baby can reach too, and it’s also a great spot to eat our snacks on.

How do I know when the dough is combined fully?

You’ll know the dough is fully combined when it clumps together into a ball and looks fully incorporated. If there are still some chickpeas visible, you’ll want to keep processing until they are blended in. However, I have made these cookies with a few whole chickpeas still inside, and they taste just as good. For a visual reference, check out the picture to see what the dough should look like when it’s ready. This dough still has some chickpea pieces visible, but came out great!

Ingredients
Method
- Preheat oven to 350 degrees and line a baking sheet with parchment paper
- Place all ingredients except chocolate chips into a food processor
- Process ingredients until they are well combined. The dough will be thick and will form a ball. Fold in chocolate chips if desired
- Roll dough into balls and place onto baking sheet. Press dough balls with palm to flatten a bit
- Bake for 10-12 minutes. Allow to cool fully before enjoying
