Peanut Butter Oatmeal Cookie Recipe: No Added Sugar!

In our home, peanut butter oatmeal cookies are an absolute favorite. These cookies are not only delicious but also packed with wholesome ingredients, making them a hit with my entire family. Whenever we bake them, it’s only a matter of hours before they disappear completely. My toddler, with crumbs on his face, always asks for just one more, while my husband sneaks a few extra when he thinks no one is looking. Even our baby can’t resist them, happily munching on a whole cookie with a big smile.

Baking these cookies has become a fun activity that we all enjoy together. It’s a great way to spend time with my toddler and baby, allowing them to learn and have fun at the same time. My toddler loves mixing the ingredients and counting scoops, and my baby likes to bang the measuring cups on the table and watch the stand mixer spin around and around. This activity is a fun opportunity for the kids to learn about measuring, mixing, and the fun of creating something delicious from scratch!

Ingredients Needed

  • Oats
  • Baking powder
  • Baking soda
  • Salt
  • Cinnamon
  • Peanut butter
  • Egg
  • Vanilla extract
  • Date syrup (Or maple syrup or honey)
  • Chocolate chips (optional)

In our recipe, we use this peanut butter that is made from 100% peanuts with no added sugar. This ensures that our cookies are not only tasty but also healthy. We love knowing exactly what goes into our food, and this peanut butter provides a rich, natural flavor without any unnecessary additives.

We also love baking with date syrup. My toddler is a huge fan and will eat almost any food as long as it has date syrup on it! The only ingredient in date syrup is dates, which naturally sweeten the cookies. It’s a fantastic alternative to refined sugar, making our cookies both nutritious and tasty.

For an optional touch of extra sweetness, we use chocolate chips that are made with just four ingredients and are sweetened with dates as well. These chocolate chips contain no added sugars, making them a perfect addition to our healthy cookie recipe. They are so tasty that we often eat them by the fistful!

How Kids Can Help with This Recipe

  • Measuring and mixing: Kids can help measure and pour the dry ingredients into the mixing bowl. We like to count scoops as we add ingredients to the bowl to practice counting. Stirring the ingredients together is another great way for them to get involved.
  • Adding ingredients: Let your kids scoop the peanut butter and crack the egg into the bowl. My son loves cracking the egg, although he mostly just slams it on the counter and squeezes it currently! We’re practicing and that is what is most important.
  • Adding chocolate chips: Kids can sprinkle in the chocolate chips and give the dough a final mix. This part is fun because you can also eat a few while doing it!
  • Rolling the dough: Kids can help roll the dough into balls and place on the baking sheet. They can also help flatten the dough balls out with the pam of their hand. This is a fun sensory experience that kids will love!

Since our kids are still little, we use toddler towers to bring them up to counter height safely. These sturdy platforms allow our children to be at the same level as us, making it easier for them to participate in the baking process. My son uses this toddler tower, and my younger daughter uses this toddler tower. Both have been awesome and have allowed them both to be able to participate in activities in the kitchen.

How to Store Peanut Butter Oatmeal Cookies

Although we’ve never had these cookies last more than a day or two in our house—they’re just too irresistible!—they should stay fresh and taste their best within a few days if stored properly. This way, you can enjoy their wholesome goodness anytime you need a sweet treat.

  • Different Nut Butter: If you’re looking for a change or have a peanut allergy, you can easily substitute the peanut butter with almond butter, cashew butter, or even sunflower seed butter for a nut-free option. Each type of nut butter will give the cookies a unique flavor.

Ingredients
  

  • 2 Cups Oats We use old fashioned oats, but you could use quick cooking oats too
  • 1/8 tsp Baking soda
  • 1 1/2 tsp Baking powder
  • 1/2 tsp Salt
  • 1/4 tsp Cinnamon
  • 1/2 Cup Peanut butter We use creamy peanut butter, but chunky peanut butter would taste good too!
  • 1/2 Cup Date Syrup Or maple syrup or honey
  • 1 Egg
  • 1 tsp Vanilla
  • 1/2 Cup Chocolate chips If desired

Method
 

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper
  2. Whisk together the oats, baking powder, baking soda, cinnamon, and salt in a large bowl.
  3. Add in the peanut butter, egg, vanilla, and date syrup. Mix well until combined. Stir in the chocolate chips if desired. The cookie dough will be wet and sticky.
  4. Place the bowl into the refrigerator for about 30 minutes (or the freezer for 5-10 minutes) to make the dough easier to work with. You can keep the dough in the refrigerator for a few days if you aren't ready to make the cookies just yet.
  5. Take the dough out of the refrigerator. If the dough is too stiff, let it sit out at room temperature for 5-10 minutes. Roll dough into balls and place on baking sheet. Press each dough ball down with your palm or the back of a spoon to flatten a bit. Leave about 1 inch in between each cookie.
  6. Bake cookies for about 10 minutes. Let the cookies cool completely before eating. The cookies will set as they cool.
